Crock Pot Lemon Garlic Butter Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs for more juiciness)
  • 4 tbsp butter, melted
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (for color & flavor)
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional, for a little kick)
  • 1 cup chicken broth
  • Juice of 1 large lemon
  • 1 tbsp lemon zest
  • 1 tbsp honey or maple syrup (optional, for slight sweetness)
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)

Preparation :

  1. Prepare the chicken – Pat dry and season with salt, pepper, paprika, and Italian seasoning.
  2. Sear for extra flavor (optional but recommended): Heat 1 tbsp butter in a pan and brown the chicken for 2 minutes per side.
  3. Layer in the Crock Pot – Place chicken in the slow cooker.
  4. Make the sauce – In a bowl, whisk together melted butter, minced garlic, chicken broth, lemon juice, lemon zest, and honey. Pour over the chicken.
  5. Slow cook – Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until chicken is tender.
  6. Finish & serve – Spoon the sauce over the chicken, garnish with parsley, and serve with lemon slices.
