Blood Sugar-Friendly Vegetable Soup Recipe

Ingredients:

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 potato (optional, or replace with cauliflower for lower carbs), diced
  • 1 cup green beans, chopped
  • 1 tomato, diced (or 1/2 cup canned tomatoes)
  • 4 cups vegetable broth (low-sodium)
  • 1/2 tsp turmeric (great for inflammation)
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • Salt and black pepper to taste
  • 1/4 tsp chili flakes (optional for extra warmth)
  • 1 handful parsley or cilantro, chopped (for garnish)

Preparation :

  1. Sauté the base – In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking for about 2 minutes until fragrant.
  2. Add the veggies – Stir in the carrots, celery, and potato (or cauliflower) and cook for another 3–4 minutes.
  3. Simmer the soup – Add the diced tomato, green beans, zucchini, broth, and all spices. Bring to a boil, then reduce heat and let it simmer for about 20–25 minutes or until vegetables are tender.
  4. Adjust seasoning – Taste and adjust salt, pepper, and spices as needed.
  5. Serve – Garnish with fresh parsley or cilantro and enjoy warm!
