Blood Sugar-Friendly Vegetable Soup Recipe

Ingredients:
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 potato (optional, or replace with cauliflower for lower carbs), diced
- 1 cup green beans, chopped
- 1 tomato, diced (or 1/2 cup canned tomatoes)
- 4 cups vegetable broth (low-sodium)
- 1/2 tsp turmeric (great for inflammation)
- 1/2 tsp thyme
- 1/2 tsp oregano
- Salt and black pepper to taste
- 1/4 tsp chili flakes (optional for extra warmth)
- 1 handful parsley or cilantro, chopped (for garnish)

Preparation :
- Sauté the base – In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking for about 2 minutes until fragrant.
- Add the veggies – Stir in the carrots, celery, and potato (or cauliflower) and cook for another 3–4 minutes.
- Simmer the soup – Add the diced tomato, green beans, zucchini, broth, and all spices. Bring to a boil, then reduce heat and let it simmer for about 20–25 minutes or until vegetables are tender.
- Adjust seasoning – Taste and adjust salt, pepper, and spices as needed.
- Serve – Garnish with fresh parsley or cilantro and enjoy warm!
