Baby Lemon Impossible Pies

Ingredients:
- 1 cup milk
- 2 large eggs
- 1/2 cup sugar
- 1/2 cup unsweetened shredded coconut
- 1/4 cup all-purpose flour
- 1/4 cup melted butter
- Zest of 1 lemon
- 1/4 cup freshly squeezed lemon juice
- 1/2 tsp vanilla extract
- Pinch of salt

Preparation :
- Preheat oven to 180°C (350°F). Lightly grease a 12-cup muffin tin (or use paper liners).
- Blend ingredients: In a blender or mixing bowl, combine milk, eggs, sugar, coconut, flour, melted butter, lemon zest, lemon juice, vanilla, and salt. Blend until smooth.
- Pour into muffin tin, filling each about 3/4 full.
- Bake for 25–30 minutes, or until the tops are golden and centers are set.
- Cool completely in the pan, then remove and chill in the fridge for at least 1 hour before serving.
Optional Toppings:
- Whipped cream
- Powdered sugar
- Fresh berries
