Baby Lemon Impossible Pies

Ingredients:

  • 1 cup milk
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup all-purpose flour
  • 1/4 cup melted butter
  • Zest of 1 lemon
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 tsp vanilla extract
  • Pinch of salt

Preparation :

  1. Preheat oven to 180°C (350°F). Lightly grease a 12-cup muffin tin (or use paper liners).
  2. Blend ingredients: In a blender or mixing bowl, combine milk, eggs, sugar, coconut, flour, melted butter, lemon zest, lemon juice, vanilla, and salt. Blend until smooth.
  3. Pour into muffin tin, filling each about 3/4 full.
  4. Bake for 25–30 minutes, or until the tops are golden and centers are set.
  5. Cool completely in the pan, then remove and chill in the fridge for at least 1 hour before serving.

Optional Toppings:

  • Whipped cream
  • Powdered sugar
  • Fresh berries
