Potato Rolls with Chicken

Ingredients:

For the potato dough:

  • 4 large potatoes, boiled and mashed
  • 2 tbsp cornstarch (or flour)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

For the chicken filling:

  • 1 cup cooked chicken, shredded
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp chopped parsley
  • 2 tbsp shredded cheese (optional)

For frying:

  • 1 egg, beaten
  • 1 cup breadcrumbs
  • Oil for frying

Instructions:

  1. Prepare the potato dough:
    • Mash the boiled potatoes until smooth.
    • Add cornstarch, salt, black pepper, and garlic powder. Mix well until a dough forms.
  2. Prepare the chicken filling:
    • In a pan, sauté the onion and garlic in a little oil until soft.
    • Add the shredded chicken, paprika, cumin, black pepper, and salt. Mix well.
    • Stir in the parsley and cheese (if using), then remove from heat.
  3. Assemble the rolls:
    • Take a small portion of the potato dough and flatten it in your hand.
    • Add a spoonful of chicken filling in the center.
    • Carefully shape it into a roll or oval shape, sealing the edges.
  4. Coating:
    • Dip each roll in the beaten egg, then coat with breadcrumbs.
  5. Frying:
    • Heat oil in a pan over medium heat.
    • Fry the rolls until golden brown and crispy.
    • Drain on paper towels to remove excess oil.
  6. Serve:
    • Enjoy hot with ketchup, garlic sauce, or yogurt dip!
