Juicy Pineapple Heaven Cake Recipe

Ingredients:

Cake Base:

  • 1 box yellow cake mix
  • 1 cup crushed pineapple (with juice)
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Topping Layer:

  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 cup sugar
  • 1 package (3.4 oz) instant vanilla pudding
  • 1 tub (8 oz) whipped topping (like Cool Whip)
  • Optional: toasted coconut flakes or chopped pecans for topping

Preparation :

  1. Preheat Oven:
    Preheat to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Make the Cake:
    In a large bowl, mix cake mix, 1 cup crushed pineapple with juice, eggs, oil, and vanilla. Beat until smooth. Pour into baking dish.
  3. Bake:
    Bake for 30–35 minutes or until golden and a toothpick comes out clean. Let cool completely.
  4. Pineapple Layer:
    In a saucepan over medium heat, mix the 20 oz crushed pineapple with juice and sugar. Bring to a gentle boil, then simmer for 5 minutes. Let cool, then spread over cooled cake.
  5. Creamy Topping:
    In a bowl, mix instant pudding with whipped topping until smooth and fluffy. Spread over the pineapple layer.
  6. Chill:
    Refrigerate at least 1 hour before serving. Garnish with coconut flakes or chopped pecans if desired.
